🐶 Ingredients:
- 2 boneless, skinless chicken breasts (or thighs for more fat)
- 1 cup white rice (plain, unseasoned)
- ½ cup carrots, finely chopped or shredded
- ½ cup green peas (fresh or frozen)
- ½ cup chopped spinach or kale
- 1 tablespoon olive oil (optional, for added healthy fats)
- 3 cups water or low-sodium chicken broth (make sure it has no onions or garlic)
🍳 Instructions:
- Cook the Chicken:
- In a medium pot, add chicken and water or broth.
- Bring to a boil, then reduce to a simmer.
- Cook until the chicken is no longer pink in the center (about 15–20 minutes).
- Remove chicken and shred it with a fork.
- Cook the Rice:
- In the same pot (you can reuse the broth for extra flavor), add rice and cook according to package directions (usually 15 minutes).
- Add more water if needed.
- Add Vegetables:
- When the rice is nearly done, add carrots, peas, and greens.
- Cook until vegetables are soft (about 5 minutes).
- Combine Everything:
- Stir in the shredded chicken.
- Add olive oil if desired and mix thoroughly.
- Cool & Serve:
- Allow the food to cool completely before serving.
