- 2 ½ pounds ground beef (lean)
- 1 large sweet potato, peeled and diced
- 1 cup green beans, chopped
- 1 carrot, grated
- ½ zucchini, grated
- ½ cup pumpkin puree (not pie filling)
- 1 egg (optional, for protein and healthy fats)
- Optional: 1 teaspoon ground flaxseed or chia seeds (for omega-3s)
🍳 Instructions:
- Cook the Sweet Potato:
- Boil or steam diced sweet potato until soft (about 10–12 minutes). Drain and set aside.
- Cook the Ground Beef:
- In a large skillet or pan, heat the coconut oil over medium heat.
- Add ground beef and cook until browned, breaking it apart as it cooks (7–10 minutes).

- Add Veggies:
- Stir in green beans, carrot, zucchini, and cooked sweet potato.
- Cook for another 5–7 minutes, until vegetables are tender.
