  • 1 cup dried lentils (red or green)<\/li>\n\n\n\n

  • 1 tablespoon olive oil or coconut oil<\/li>\n\n\n\n
  • 2 carrots, grated or chopped<\/li>\n\n\n\n
  • 1 zucchini, grated<\/li>\n\n\n\n
  • \u00bd cup green peas<\/li>\n\n\n\n
  • \u00bd cup pumpkin puree (not pie filling)<\/li>\n\n\n\n
  • 2 tablespoons chopped parsley (optional)<\/li>\n\n\n\n
  • 4 cups low-sodium vegetable broth or water<\/li>\n<\/ul>\n\n\n\n
